Cheesy Italian Chicken Spaghetti Squash Casserole


1 cup (5.46 oz) prepared Spaghetti Squash (2 greens)

1/2 cup (3.17 oz) diced tomatoes (<5 g carbs per serving) (1 green)

2 Wedges Light Laughing Cow Garlic and Herb Cheese (2 condiments)

1/4 cup 2% reduced fat Mozzarella cheese, shredded (1/4 lean)

6.75 oz raw Chicken Breasts, cubed (4.5 oz cooked) (3/4 leaner)

2 Tbsp Wishbone Light Italian Dressing (1 healthy fat)

1 tbsp Parmesan Cheese, grated (1 condiment)


Preheat oven to 350°. Prepare spaghetti squash by oven or microwave.

Marinate chicken in Italian dressing. Spray a nonstick skillet with cooking spray. Add chicken and cook thoroughly. Set aside.

Saute spaghetti squash, Italian diced tomatoes and cheese wedges until cheese is melted.

Pour squash mixture in small casserole dish (or back into squash shell). Spread chicken on top. Sprinkle shredded cheese then Parmesan cheese over chicken. Bake 7-10 minutes or until cheese has melted.
