Non-stick Cooking Sprayâ €
12 oz Salmon (raw)â €
1 cup Peppers, Greenâ €
1 cup Peppers, Redâ €
1 cup Peppers, Yellowâ €
1/4 tsp Saltâ €
1/4 cup Waterâ €
1/2 tsp Cuminâ €
1 tbsp Hot Pepper Sauceâ €
1 1/2 cup Cilantroâ €
1 tbsp Lemon or Lime Juiceâ €

Directions:â €
Preheat oven to 400° F.⠀
Marinade: In a food processor, combine cilantro, lemon, hot red pepper sauce, cumin, salt, and water; puree until smooth. Transfer marinade to gallon-size ziplock bag. Add salmon and seal bag, turn to coat salmon.â €
Refrigerate 1 hour, turning bag occasionally.â €
Spray square baking dish w/non-stick spray.â €
Arrange pepper slices in a single layer in prepared pan; bake 20 minutes, turning pepper once.â €
Drain salmon; discard marinade. Place salmon on top of pepper; bake turning once, 12-14 minutes, or until fish flakes easily when tested w/fork.
