Ginger Tzatziki Chicken Wrap
Ingredients:
For the Chicken Marinade:
36.4 oz Chicken Breasts, diced ~Yields 24 oz cooked
1/4 Cup low sodium Soy Sauce
2 tsp Ginger Powder
4 tsp Olive Oil
1/4 tsp Pepper
For the Tzatziki Sauce:
1/4 Cup (.92 oz) Cucumbers, finely diced
1 Clove Garlic, minced
1/2 tsp Dill, dried
1/4 tsp Salt
1/4 tsp Pepper
1/2 Cup (4.4 oz) Plain Greek Yogurt, low-fat
For the Wraps:
6 cups (9.96 oz) Whole Romaine Lettuce Leaves
3/4 cup (2.75 oz) Cucumbers, sliced (1 1/2 greens)
Directions:
Mix marinade ingredients in a bowl or zip lock bag and allow chicken to marinate for at least 30 minutes.
Mix Tzatziki Sauce ingredients in a bowl and allow flavors to marry together for an hour or two.
Assemble chicken on kabob sticks and grill or bake/cook. Place several cucumber slices in lettuce boats followed by chicken and top with Tzatziki sauce.
