Vegan Tofu Nuggets
Ingredients
15 oz. extra-firm tofu
2 Tbsps almond flour
1 Tbsp nutritional yeast
½ tsp garlic powder
¼ tsp salt
½ cup no-sugar-added tomato sauce
Directions
Preheat oven to 400 ℉.
Press tofu: Place tofu onto multiple layers of paper towel or a clean dishcloth on top of a plate or cutting board. Place another layer of paper towels or another clean dishtowel on top of the tofu. Place a weight on top of this second layer (this could be a large plate with canned foods on top or a stack of plates or hardcover books). Let sit for at least 15 minutes, and then cut the tofu into nugget-shaped pieces.
Combine almond flour, nutritional yeast, garlic, and salt in a large, resealable plastic bag. Add tofu pieces, and toss until evenly coated.
Place tofu nuggets onto a greased, foil-lined baking sheet, and spray tops with cooking spray. Bake until lightly browned, about 25 to 30 minutes, flipping halfway through.
Serve with the tomato sauce.
