Lemon Pepper Chicken & Kale Stir Fry
Ingredients
• 3 tsp avocado or extra virgin olive oil
• 3 Tbsp fresh lemon juice (adjust to your taste)
• 1.5 tsp pepper
• 1 Tbsp lemon zest
• 1 cup leeks, thinly sliced
• 9 oz raw chicken breasts (6oz cooked), cut into 1 1/2-inch cubes
• Non-stick Pan spray
• 7 cups kale, ribs removed & sliced into strips
Directions
1. In a large bowl, whisk together 3 tsp oil, lemon juice, pepper, & zest.
2. Toss cut chicken w/marinade & set aside.
3. In a large skillet over medium-high heat, spray pan & begin to caramelize onions, stirring 2 min.
4. Turn down to low & cook to golden brown, ~5-6 min.
5. Turn up to medium high, add chicken w/marinade & cook until browned & cooked through.
6. 2 min before chicken is finished, add kale & toss to cook.
7. Serve immediately
