Dijon Roasted Broccoli
Makes 1 serving
Per serving:
3 Green
1 Fat
3 Condiments
Ingredients:
1 ½ cups broccoli florets
1 tsp olive oil
1 1/2 tsp Dijon mustard
1 tsp lemon juice
1/8 tsp salt
1/4 tsp pepper
Directions:
Preheat oven to 400°. Line a cookie sheet with parchment paper.
Lay the broccoli out on the cookie sheet.
In a small bowl, combine the oil, mustard, lemon juice, salt and pepper. Whisk to combine. Toss the dressing over the broccoli to combine evenly.
Bake for 10 minutes. Serve hot.
