Spinach and Cauliflower Mac and Cheese
1 lean, 3 green, 3 condiments, 1 healthy fat
INGREDIENTS
4.5 oz cauliflower steamed and drained
1 cup unsweetened almond milk
2 tablespoons low fat cream cheese
6 oz low fat cheddar cheese
3.17 oz fresh spinach
1/6 tsp paprika
1/3 tsp ground mustard
1/6 tsp black pepper
1 tablespoon Parmesan cheese
INSTRUCTIONS
1. Preheat the oven to 350 F degrees.
2. Cauliflower: steam, drain and allow to dry
3. Cheese Sauce: In a small saucepan, warm almond milk, cream cheese
4. When the milk begins to lightly bubble around the edges, Reduce the heat to low and slowly add the cheddar cheese a little at a time, continuing to stir until melted and smooth.
5. Remove the saucepan from the heat and stir in the dry seasonings. Set aside.
6. To Assemble: add half of the cauliflower to a small baking dish. Top with spinach (remove the stems) and then the remaining cauliflower. Pour the cheese sauce over the cauliflower. Using a spoon, lightly move the cauliflower around so it is evenly coated with the sauce.
7. Top with the parmesan cheese.
8. Bake, uncovered, for 13-15 minutes or just until the cheese has melted. Broil for additional 2-3 minutes until golden brown. Serve immediately
