Tangy and sweet Lime Coleslaw
Makes 9 servings
Each serving provides:
1 green
1 healthy fat
2 condiments
1 ½ teaspoons grated lime peel
¼ cup lime juice
2 tablespoons Splenda
1 garlic clove
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon red pepper flakes
3 tablespoons canola oil
3 cups red cabbage
1 cup yellow pepper
½ cup green onion
½ cup cilantro
Whisk together the first seven ingredients until smooth. Gradually whisk in oil until blended. Combine cabbage, yellow pepper and green onions; toss with lime mixture to lightly coat. Refrigerate, covered, 2 hours. Sprinkle with cilantro.
