Loaded Cauliflower Soup

Ingredients:
1 tsp olive oil
1/4 c diced onion
1/4 c diced celery
2 cloves garlic, minced
4 c chopped cauliflower florets
1 med zucchini, chopped
2 c chicken broth
1 bay leaf
1/4 tsp each salt & pepper
1, 5.3 oz container low-fat, plain Greek yogurt
1 1/2 c reduced-fat shredded cheddar cheese, divided
12 oz cooked boneless skinless chicken breast, diced
2 slices turkey bacon, cooked & chopped
Chives to garnish

Directions:
Heat oil in a large saucepan over medium. Add onion & cook until translucent. Add celery & garlic, cook 2-3 min. Add next 5 ingredients. Cover & bring to a boil, then reduce heat & simmer 8 min or until veggies are tender.

Remove from heat & discard the bay leaf. Puree the mixture in a food processor.
Slowly mix in yogurt & 1 cup of cheese, then add chicken. Garnish w/remaining cheese, bacon bits, & chives.
