Avocado Egg Salad

Per serving:
1 Leaner protein, 1 Healthy Fat, 3 Condiments
Ingredients:
2 hard-boiled eggs, chopped
2 hard-boiled egg whites, chopped
1 ½ ounces avocados, pitted and peeled
¼ cup plain greek yogurt (I use Fage)
2 tsp fresh lemon juice
1 tbsp chopped green onion
¼ tsp dijon mustard
1/8 tsp salt
¼ tsp freshly ground pepper
Directions:
In a medium bowl, combine the hard-boiled eggs and egg whites, avocado, Greek yogurt, lemon juice, green onion, and mustard. Mash with a fork. Season with salt and pepper
