Baked Salmon Dijon
The recipe yields 4 servings, per serving: 1 Lean | ¼ Green | 3 Condiments.
Ingredients:
24 ounces raw salmon filet
1 cup low fat Greek yogurt
2 tsp dried dill
¼ cup finely chopped scallions
1 ½ Tbsp Dijon mustard
2 Tbsp lemon juice
1/2 tsp garlic powder
1/2 tsp black pepper
Directions:
Preheat oven to 400F. Whisk yogurt, dill, scallions, mustard, and lemon juice in small bowl to blend. Lightly oil baking sheet with cooking spray. Place salmon, skin side down, on prepared sheet. Sprinkle with garlic powder and pepper, then spread with the sauce. Bake salmon until just opaque in center, about 20 minutes.
I chose to serve this with 202.5g of steamed asparagus to complete my lean and green for the day! 202.5g asparagus = 2 and 3/4 green.
