Chicken Zucchini Stir Fry
Ingredients
1/2 cup chicken broth
1 teaspoon almond flour
1 teaspoon rice vinegar
2 teaspoons soy sauce
1 teaspoon peanut oil
1 teaspoon minced garlic
1 teaspoon minced fresh ginger
9 ounces skinless, boneless chicken breasts, cut into strips
1 cup zucchini, chopped
½ cup scallions chopped
½ ounce Peanuts
Whisk together chicken broth, almond flour, rice vinegar, and soy sauce and set aside. Heat peanut oil over medium-high heat in a wok. Add garlic and ginger and sauté briefly Add chicken and stir fry until no longer pink. Add zucchini and scallions and continue sautéing until browned. Add sauce and bring to a boil. Reduce heat and simmer for 2 to 5 minutes. Top with peanuts.
