Cream of Cauliflower Soup

Serves 4
Per serving: 3 green, 1.25 condiments, 1 lean
Ingredients
● 6 cups cauliflower
● 2 cups low sodium vegetable or no-chicken broth
● 2 Tbsp Parmesan Cheese
● 1/4 tsp pepper
● 2 Tbsp fresh chive
● 2 cups water
● 4 cups shredded part-skim Mozzarella cheese

Directions
1. Remove the leaves and thick core from the cauliflower, coarsely chop.
2. Add the cauliflower, broth and water to a large pot and bring to a boil.
3. Reduce the heat to a simmer, cover, and cook until the cauliflower is very soft and falling apart – about 15 minutes. (If using frozen cauliflower just boil for 1 minute until tender.)
4. Add the parmesan cheese, pepper and chives and let it simmer for another 5-10 minutes.
5. Divide it into 4, in each bowl add 1 cup of mozzarella cheese
