GREEK LEMON CHICKEN SALAD
Ingredients:
1 cup (3.66 oz) Raw Cucumber, with peel (2 greens)
1 cup (5.26 oz) Raw Peppers, Red (2 greens)
1 cup (6.34 oz) Raw Tomatoes (2 greens)
8 olives Olives, Black (1 healthy fat)
18.2 oz Chicken, breast, boneless, skinless (raw) ~Should Yield 12 oz cooked
1 tsp Oil, olive (1 healthy fat)
2 tbsp dried Parsley (2 condiments)
1 clove Garlic, clove (1 condiment)
4 tsp Lemon or Lime Juice (2 condiments)
2 Tbsp Raw Onion (2 condiments)
Directions:
1. Preheat the grill to medium-high heat.
2. Place chicken on the grill when heated and cook for about 5 minutes on each side, or until chicken is thoroughly cooked and no longer pink. Cut chicken into slices.
3. In a serving bowl, combine parsley, olives, and garlic. Whisk in 4 tsp lemon juice and 1 tsp olive oil. Add cucumber, bell pepper, tomato, and onion. Toss to coat ingredients with dressing. Add up to 1 tsp more lemon juice to taste.
4. Split salad into two servings and place 6 oz chicken on top of each salad.
